Wavy Watermelon & Romaine Lettuce Smoothie

As I look on my counter and see a delicious watermelon waiting to be cut and sliced for the sweet, sweet fruit inside, I can’t help but think about using some of it for a yummy watermelon smoothie. Here is a smoothie that uses said watermelon and some ingredients you may not think go with watermelon. As always, try it and comment what you thought.

  • 4 cups watermelon chunks, no rind please.
  • 1 banana
  • 5 leaves romaine lettuce
  • Juice of 1/2 lemon <–this gives the smoothie a great flavor.

Blend it an really enjoy it while watermelons are still in season. Makes 2 servings

My 17 yr old says…”I’m not sure. It’s like part of it’s good, and part of it’s…’hmmmmm’…..” I’m not sure either. Definitely healthy, but the lettuce is kind of weird.

I don’t see why you couldn’t cut up pieces of watermelon and freeze them for when they are out of season? I’m pretty sure I have seen frozen cantaloupe in the freezer fruit section of grocery stores. It’s not going to matter if the watermelon is “mushy” after freezing it, as it is going to be pureed in a blender anyway.

I had this as dinner just last night and it was great. I did not feel like eating until this morning. It’s like a blended salad. Always ready to try! SO go ahead. Try it!

I would replace romaine lettuce with a big handful of raw baby spinach

My 11 year old begged for a smoothie this morning. We had the ingredients so I gave it a try. It looks funky, but he really liked it! I think the greens and lemon give it a fresh taste.
