While not thought of often when thinking of smoothies, vegetable smoothies can be extremely healthy and low in sugar. We are always looking for a good vegetable smoothie recipes.
Tomatoes are a great ingredient for a healthy smoothie recipe because of their antioxidant properties. Men in particular should add tomatoes to their diet to help prevent prostate cancer.
Ingredients:
- 2 cups (chopped) tomatoes
- 1/2 cup tomatoe juice
- 1/4 cup apple juice
- 1/2 cup carrots
- 1/4 cup (chopped) celery
- Tabasco or hot sauce to taste
- 2 cups ice
Ingredients
- 12 ounces of fresh carrot juice
- 2 cups of vanilla yogurt
- 1/2 of a peeled lime
- 3 baby carrots
- 8 ice cubes
Directions: Place all of the ingredients into a blender, and mix until smooth. Using freshly juiced carrot juice is recommended. Serves 2.

Ingredients
- 2 cups carrot juice
- 1/2 cup apple juice
- 6 oz. non-fat vanilla or plain yogurt, frozen
- 1 banana
Put all ingredients into blender. Blend until smoothie consistency is reached!

- 1/4 cup tofu
- 1 1/2 cups tropical V-8 Splash or other pineapple/citrus blend
- 1/4 cup plain non fat yogurt
- 1/2 banana
- Frozen strawberries, pineapple, and mango
- water or soy milk to taste/consistency
Optional:
3 or 4 baby carrots (you’ll never know they’re in there!) 1 tbs. wheat germ or 4-5 almonds
Blend all ingredients in blender until smooth.
Ingredients
- 1 cucumber, peeled, seeded and chopped
- 3 tablespoons mint leaves & mint spigs — finely chopped
- 1 1/2 cups apple juice or still cider
- 1 cup lemon sorbet
- 1 cup ice cubes
Place the cucumber, mint, apple juice or cider, sorbet and ice in a blender, and blend until smooth. Garnish with mint, and serve. Yield: 2

Cucumber, red pepper and scallions blend in our vegetable Smoothie to help get the morning off to a vigorous start.
Ingredients
- 2 cups tomato juice
- 1/2 cup chopped red bell pepper
- 1/2 cup peeled and chopped cucumber
- 3 tablespoons lemon juice
- 2 tablespoons chopped scallions
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon fresh-ground pepper
- 1/4 teaspoon hot-pepper sauce
Preparation
Combine all ingredients in a blender and blend until smooth. Chill for at least 30 minutes. Fill 4 glasses with ice and divide the smoothie mixture among the glasses.

- 2 bananas, peeled, sliced and frozen
- 1 1/2 cups pineapple juice
- 8 oz packet vanilla low-fat yogurt
- 1 cup fresh or frozen raspberries
Preparation
Freeze bananas until hard. Combine the bananas, pineapple juice, yogurt and raspberries in the container of a blender, blend until smooth. Serve immediately.

- 1 to 1 1/2 cups carrot or carrot-orange juice

Combine all the ingredients in a blender and blend until smooth. Adjust consistency with more liquid if desired. Serve at once in tall glasses. Serves 2 to 3.

- 1 - 2 tablespoons fresh lemon juice OR balsamic vinegar
- 4 tablespoons picante salsa
- 1 cup raw broccoli
- 1 raw tomato, quartered
- 1/2 raw carrot, cut into 1-inch pieces
- 1 cup raw kale, or any leafy green
- 1 - 2 cloves raw garlic
- 1/2 cup raw hulled sunflower seeds
- 1/2 cup raw un-hulled sesame seeds
- 1 - 2 slices onion
Preparation
Start by pouring liquid ingredients (lemon juice, salsa) into blender. Add remaining ingredients and blend until texture is that of a creamy milkshake.
