Plum Smoothie Popsicles

Don’t feel like making popsicles? The combination also makes a great plum smoothie.

Yields: 6 popsicles
Prep Time: 15 minutes
Total Time: 4 hours

Ingredients

  • 1/4 cup sugar
  • 1 tablespoon corn syrup
  • 1 pound assorted plums, pitted and chopped
  • 8 teaspoons fresh lime juice
  • 6 ounces plain yogurt

Preparation

  1. Bring the sugar, corn syrup, and 1/4 cup water to a boil in a small saucepan.
  2. Remove from heat and cool.
  3. Puree the plums, cooled syrup, and lime juice in two batches, using a blender, until smooth.
  4. Stir the plum puree and yogurt together in a large mixing bowl.
  5. Pour the mixture into popsicle molds, leaving about 1/2 inch at the top, as the mixture will expand when it freezes.
  6. Freeze until solid — about 4 hours.
